Philly Cheesesteak & Grits — A Soulful Twist on a Classic

When Philly flavor meets Southern soul, something special happens. This Philly Cheesesteak & Grits mashup combines the bold, savory flavor of the city with the comforting smoothness of the South.

Creamy, buttery grits create the perfect base for juicy steak strips, sautéed onions and peppers, and a generous layer of melted cheese. It’s breakfast, lunch, or dinner — all in one bowl of fire.


Ingredients

For the Grits:

  • 1 cup stone-ground grits
  • 3 cups water
  • 1 cup milk
  • 2 tbsp butter
  • ½ cup shredded cheese (cheddar or provolone)
  • Salt and black pepper to taste

For the Philly Cheesesteak Topping:

  • ½ lb ribeye steak or thinly sliced beef
  • 1 tbsp olive oil or butter
  • ½ onion, sliced
  • ½ green bell pepper, sliced
  • ½ red bell pepper, sliced
  • 2 slices provolone or white American cheese
  • Salt, pepper, and garlic powder to taste

Directions

Step 1: Make the Grits

  1. In a pot, bring water and milk to a low boil.
  2. Slowly stir in the grits while whisking to prevent clumping.
  3. Reduce heat and let simmer for about 15–20 minutes, stirring occasionally.
  4. Once thickened, add butter, cheese, salt, and pepper.
  5. Stir until creamy and smooth, then set aside on low heat.

Step 2: Cook the Cheesesteak

  1. Heat oil or butter in a skillet over medium-high heat.
  2. Add onions and bell peppers — sauté until soft and slightly caramelized.
  3. Add the thinly sliced beef and season with salt, pepper, and garlic powder.
  4. Cook until the meat is browned and tender, about 5–7 minutes.
  5. Lay cheese slices over the meat and let them melt into the mix.

Step 3: Build the Bowl

  1. Spoon your creamy grits into a bowl.
  2. Top with the hot cheesesteak mixture.
  3. Garnish with fresh green onions or a sprinkle of shredded cheese if you want that extra drip.
