Michelin-Star-Inspired Pancake Recipe

What makes this recipe interesting is how stripped down the ingredient list is. Instead of relying on a traditional flour-heavy pancake batter, the eggs provide most of the structure while cornstarch helps stabilize the mixture.

Ingredients

  • 8 eggs
  • 2 oz cornstarch
  • 1 cup sugar
  • Lemon juice, to taste
  • Butter or oil for cooking

Directions

Separate the eggs, placing the whites and yolks into different bowls.

Whisk the egg yolks with the cornstarch and a portion of the sugar until the mixture becomes smooth.

In a separate clean bowl, whip the egg whites while gradually adding the remaining sugar. Add a small amount of lemon juice. Continue whipping until the whites form a thick, glossy meringue with firm peaks.

Gently fold the egg-white mixture into the yolk mixture. Don’t aggressively stir it—the trapped air is what helps give the pancakes their light texture.

Cook the pancakes over controlled low-to-medium heat. Because this batter contains a large amount of egg and sugar, you don’t want the outside browning too quickly before the center has a chance to set.

Then finish them with the black butter glaze.

Black Butter Glaze

The name sounds dramatic, but black butter doesn’t mean intentionally burning your butter until it’s actually black. You’re essentially taking browned butter deeper to develop a dark, nutty flavor while stopping before the milk solids become unpleasantly burnt.

Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1–2 teaspoons lemon juice, optional

Directions

Place the butter in a light-colored saucepan over medium heat. Allow it to melt and begin foaming.

Continue cooking while swirling the pan occasionally. The milk solids will begin turning golden brown and eventually a deep brown. You’ll notice a rich, toasted aroma.

Don’t walk away during this part. There’s a very small window between deeply browned butter and burned butter.

Reduce the heat and carefully stir in the brown sugar. Add the heavy cream gradually and whisk until the mixture becomes smooth and glossy.

Stir in the vanilla and a small pinch of salt. A little lemon juice can be added at the end to cut through the sweetness and give the glaze some acidity.

Let the glaze thicken slightly before pouring it generously over the warm pancakes.

Stack the pancakes high, add a small piece of butter on top and pour that warm black butter glaze over everything so it runs down the sides.

That’s the difference between simply making breakfast and creating a plate people remember.

And that’s one of the biggest lessons I’m taking from studying Michelin-level cooking: you don’t always need exotic ingredients. Sometimes it’s about taking familiar ingredients and becoming obsessed with technique.
