Creamy, buttery grits create the perfect base for juicy steak strips, sautéed onions and peppers, and a generous layer of melted cheese. It’s breakfast, lunch, or dinner — all in one bowl of fire.
Ingredients
For the Grits:
- 1 cup stone-ground grits
- 3 cups water
- 1 cup milk
- 2 tbsp butter
- ½ cup shredded cheese (cheddar or provolone)
- Salt and black pepper to taste
For the Philly Cheesesteak Topping:
- ½ lb ribeye steak or thinly sliced beef
- 1 tbsp olive oil or butter
- ½ onion, sliced
- ½ green bell pepper, sliced
- ½ red bell pepper, sliced
- 2 slices provolone or white American cheese
- Salt, pepper, and garlic powder to taste
Directions
Step 1: Make the Grits
- In a pot, bring water and milk to a low boil.
- Slowly stir in the grits while whisking to prevent clumping.
- Reduce heat and let simmer for about 15–20 minutes, stirring occasionally.
- Once thickened, add butter, cheese, salt, and pepper.
- Stir until creamy and smooth, then set aside on low heat.
Step 2: Cook the Cheesesteak
- Heat oil or butter in a skillet over medium-high heat.
- Add onions and bell peppers — sauté until soft and slightly caramelized.
- Add the thinly sliced beef and season with salt, pepper, and garlic powder.
- Cook until the meat is browned and tender, about 5–7 minutes.
- Lay cheese slices over the meat and let them melt into the mix.
Step 3: Build the Bowl
- Spoon your creamy grits into a bowl.
- Top with the hot cheesesteak mixture.
- Garnish with fresh green onions or a sprinkle of shredded cheese if you want that extra drip.
