Chili Cheese Ceviche: A Spicy Fusion Twist That Breaks All the Rules

Ceviche has always been about freshness — bright lime juice, tender seafood, and crisp veggies. But today, we’re doing it El Reylo style — with a spicy, cheesy, chili-infused twist.

This Chili Cheese Ceviche blends Latin flavor and street-style comfort food energy. It’s zesty, creamy, and a little wild — the kind of dish that looks fancy but hits like your favorite late-night craving.


🐟 Ingredients for the Ceviche

Serves: 2–3

Seafood Base:

  • 1 lb fresh white fish (tilapia, halibut, or sea bass), finely diced
  • 1 cup lime juice (freshly squeezed)
  • 1 diced tomato
  • ½ red onion, finely chopped
  • 1 diced jalapeño (optional for heat)
  • ¼ cup chopped cilantro
  • Salt and pepper to taste

Instructions:

  1. Add the diced fish to a bowl and cover completely with lime juice.
  2. Let it “cook” in the juice for about 20–25 minutes, or until opaque.
  3. Mix in your diced tomato, onion, cilantro, and jalapeño.
  4. Season with salt and pepper, then refrigerate while you prep the toppings.

🌶️ Chili Topping

Ingredients:

  • ½ lb ground beef or turkey
  • 1 can diced tomatoes
  • 1 can chili beans
  • 2 tbsp tomato paste
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 tbsp sour cream (to stir in at the end for creaminess)

Instructions:

  1. Brown the meat in a skillet.
  2. Add tomato paste, diced tomatoes, and chili beans. Stir well.
  3. Mix in your spices — chili powder, cumin, salt, and pepper.
  4. Let it simmer for 10–15 minutes.
  5. Remove from heat and stir in sour cream for a smooth, rich texture.

🧀 Chipotle Queso Sauce

Ingredients:

  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup milk
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 chipotle pepper in adobo (finely minced)
  • Salt to taste

Instructions:

  1. Melt butter in a pan and whisk in flour to make a light roux.
  2. Slowly add milk, whisking until smooth.
  3. Add cheese and chipotle pepper.
  4. Stir until creamy, then season with salt.

🥣 Putting It All Together

  1. Start with a base of chilled ceviche in your bowl.
  2. Add a spoonful (or two) of your warm chili over the top.
  3. Drizzle the chipotle queso sauce generously.
  4. Finish with a few dollops of sour cream and a sprinkle of chopped green onions.
