Greek Leg of Lamb in the Instant Pot
Ingredients
- For the Lamb:
- 4-5 lbs leg of lamb, bone-in or boneless
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
- 2 tablespoons fresh oregano, chopped (or 1 tablespoon dried)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 lemon, juiced
- 1 cup chicken or vegetable broth
- 1 onion, quartered
- 2 carrots, chopped
- 2-3 potatoes, quartered (optional)
Instructions
- Prepare the Marinade:
- In a bowl, mix the minced garlic, rosemary, oregano, olive oil, salt, pepper, and lemon juice to form a paste.
- Rub this mixture all over the leg of lamb. Let it marinate for at least 30 minutes, or preferably overnight in the refrigerator.
- Sear the Lamb:
- Turn the Instant Pot to the “Sauté” mode. Once hot, add a little olive oil.
- Sear the lamb on all sides until browned (about 4-5 minutes per side). Remove the lamb and set it aside.
- Sauté the Vegetables:
- In the same pot, add the quartered onion and sauté for about 2-3 minutes until softened.
- Add the chopped carrots and potatoes, sautéing for another 2-3 minutes.
- Add Liquid:
- Pour in the chicken or vegetable broth, scraping up any brown bits from the bottom of the pot. This adds flavor and prevents burning during pressure cooking.
- Pressure Cook:
- Place the lamb back into the pot, nestling it among the vegetables.
- Close the lid, set the valve to sealing, and select “Pressure Cook” (or “Manual”) on high for 60-70 minutes, depending on the size of your lamb.
- Once done, allow for a natural pressure release for about 15 minutes, then carefully switch to quick release for any remaining pressure.
- Serve:
- Remove the lamb from the pot and let it rest for a few minutes before slicing.
- Serve with the cooked vegetables and drizzle some of the broth over the top.
